This was a very simple recipe, if you have all the ingredients ready then a quick blitz and here you go, in minutes you will have the most scrumptious drink in hand. Basically it is prepared with rum but Sanjeev Kapoor suggested to add ice-cream instead which makes it children favourite too. My husband loved it, as he loves anything with pineapple in it.
The pina colada is a sweet, rum-based cocktail made with rum, cream of coconut, and pineapple juice, usually served either blended or shaken with ice. It may be garnished with a pineapple wedge, a maraschino cherry or both. The piña colada has been the official beverage of Puerto Rico since 1978.
The name ‘Piña Colada’ literally means ‘strained pineapple’, a reference to the freshly pressed and strained pineapple juice used in the drink’s preparation. National Piña Colada Day is celebrated each 10th July.

- Shredded tender coconut – 8 tbsp
- Thick low fat coconut milk – 8 tbsp
- Vanilla Ice cream – 2 cups
- Pineapple Juice – 1 ¾ cup fresh or tetra pack
- Crushed ice as required
- Tinned slices of pineapple – 8 tbsp
Blend coconut with coconut milk. Add ice cream and crushed ice and blend again. Finally again give a quick blitz by adding pineapple juice. Put some slices of pineapple in the serving glass and pour the pina colada over it. Serve chilled.
