I was little apprehensive before baking this cake because I made this in large quantity and if in any case it didn’t came out well, lot will be wasted. But it came out wonderfully moist and tasty too. It is a good option for mothers who want to pack healthy in kid’s lunch box.
Next time I will try making a layer cake with this recipe.
If your kids or other family members love cakes or other desserts but you know all were made using plain flour then you can bake a cake for them by replacing plain flour with whole-wheat flour. I promise it won’t alter the taste at all. The only change you will notice would be color, that too taken care of by adding little chocolate.

- 1 cup whole wheat flour
- 1 cup jaggery or Gur ki shakkar (I replaced it normal grinded sugar)
- 1.5 tsp baking powder
- 1/3 cup oil
- 2 eggs
- 1/2 cup water
- 1/2 tsp almond essence
- 1/2 cup walnuts-chopped and dusted with flour
Preheat the oven at 180 degree C. Grease an 8′ tin with butter. Place the flour, sugar, baking powder, oil and eggs in a bowl and beat well.Add the water and almond essence. Beat till smooth. Mix in the walnuts. Place the mixture into the tin and bake in the pre-heated oven for 35-40 minutes or till a knife pierced in comes out clean.
