Pineapple Kulfi ….twist to mom’s recipe

Kulfi, you all must had, made by your mom.  When we were kids, in summers every day after coming from school and  finishing our lunch we used to have this luxurious kulfi with cardamom flavor.  Freezed in an ice tray.  Anything cannot be more beautiful and lovable than your mom.  We all lined up in a row with trays lying in front of us.  We all can have this beautiful kulfi as much as we want and with never forget that ice-crystals.  Sometimes these fond memories take you down through past memory lane and once again you want to go to that phase where you were the little princess of your parents and they were ready to bring everything in your little fist. I know everyone of you have those beautiful memories.

Pineapple Kulfi

My son don’t like the traditional cardamom flavor so added a splash of pineapple essence with little bit of pineapple chunks to my kulfi.  To my surprise they loved it so much that they finished the tray right away.  Now winter has arrived my next batch of kulfi has to wait for summers to come.

My photos were taken at night so the effect was not so good as I still have to learn how to take beautiful pictures in low light.  Also I was busy ,so couldn’t take many photos.

Pineapple Kulfi

Serves 6

Ingredients

  • Milk – 1 litre
  • Sugar – ¼ cup
  • Pineapple essence – 1tsp
  • Pineapple slices – 2 (chopped finely)
  • Slivered almonds to decorate

Method

Pour the milk in a heavy bottom pan. Reduce the milk to   one- fourth.  Stirring is occasionally in the beginning and later continuously on slow flame.  Add sugar and pineapple essence and give it a one boil and check whether the sugar has dissolved or not, if not, let it melt down.  Let it cool down in room temperature.  Add pineapple chunks, now with hand blender blend the mixture and pour it in the molds.  Serve by sprinkling diced almonds.
