Now when afternoon seems brighter and sunny, people were seen more and more on the road or in the park, days seems bigger. Urge of children to play out has increased, even parents were tired of binding there flying birds home, to prevent them from cold. My son who waited long for summer, so that he can have his favourite ice cream and after seeing warm sun, summers, according to him has started. But somehow I managed to prevent him for having this for some more days.
But to satisfy his cold craving I made this trifle, which I made with yogurt and pomegranate molasses. He loved this. I just made one serving because we all are having sore throat for some days. I love to try this with strawberry too. Trifle is an very easy dessert to make with leftover cake, some nuts, fruits and just add some fruit sauce or jam mixed with some water into it and here it goes, the most exotic dessert is ready in minutes. I prefer using boiled water instead of sugar syrup in my dessert to avoid extra sugar.
- Any leftover sponge or cake crumble
- Water, boiled and cooled – 2tbsp
- Pomegranate molasses(recipe follows) – ¼ cup
- Hung yogurt filling (recipe follows) – ½ cup
- Pomegranate pearls – a handful
- Diced almonds – 2 tbsp
Method of trifle
Cut small circles with the help of a cutter according to your serving glass. Make first layer of sponge in the serving glass. Sprinkle ½ tbsp water over it. Make another layer of hung yogurt then drop some pomegranate molasses over and sprinkle some almonds and pomegranate pearls. Repeat this process until he glass filled
Ingredients for Pomegranate molasses
- Juice of Pomegranate – 1 cup
- Sugar – 1/8 cup
- Lemon juice – 1 tsp
In a pan bring all the things for a boil and let it simmer for about 2 – 3 minutes. Immediately transfer the syrup in a bowl to avoid over cooking. Let it cool completely before using.
Hung curd filling
- Hung curd – ½ cup
- Single cream – 1 tbsp
- Honey – 1 tbsp
Mix all things together.
