strawberry Quark Cheesecake

Again,  one more from my old stuff.  It was my first hands on experience of making a cheesecake.  I always looked with great desire, whenever I find a cheesecake with blueberry topping in the market.  I tasted it once and was totally disappointed, as it was not fresh after that I never tried again but always wished to have.  So when I am finally into baking  and while searching the net I found  a post on Passionate about Baking about  quark,  a curd cheese and a best substitute of cream cheese. I couldn’t wait further to have a slice fresh.


I must say I hear just praise for this cake but sadly after that I could not make that cake again .May be next I will try this cake with blueberry topping. I have bookmarked a beautiful recipe of baked blueberry cheesecake.  So may very soon I get to taste my favourite cake with my favourite topping too.


Ingredients for  Biscuit base

  • 200g  marie biscuits, crushed
  • 100g melted butter

Ingredients for Cheese filling

  • 350g Quark (recipe follows)
  • 150g  single cream
  •  1/3 cup sugar
  • 1 tsp – vanilla essence)
  • Gelatin –  2 tsp
  • Cold water – 2 tbsp.

Ingredients for strawberry topping

  • Strawberry, chopped – 6
  • Sugar – 4 tsp
  • Lemon juice – 2 tsp

Ingredients for quark

  • 1/2 cup cultured buttermilk
  •  3 1/2 cups full cream pasteurized milk at room temperature

Method of quark

Stir the buttermilk into the milk and cover it. Put the container in a warm place. Allow the culture to proceed for 24 hours, or until the curds and whey separate. At first the milk will look grainy, and eventually the curds will float on the whey. The grainy stage is probably sufficient, but might give a lower yield. Dampen a clean tea towel and use it to line a sieve. Place the sieve over a basin. Pour the curds and whey into the strainer. Bring the tea towel together so that it covers your quark. Put this in freeze as it is with the sieve. Allow to drain in the fridge overnight, or for 24 hours.

Method of  Biscuit Base

Grease a loose bottomed tart tin. Mix the melted butter and the crushed biscuits. Turn into the bottom of the prepared tin and press to form base. Chill for 30 minutes.

Method of Cheese  filling

Place cold water in a bowl and sprinkle gelatin powder over it and let stand for 5 minutes until the gelatin gets

Meanwhile heat cream over low heat  add sugar and continue to stir until the sugar dissolved.  Take off from the heat and add gelatin mixture  and set aside for 20 minutes to cool. Add lightly whipped quark into cream mixture. .

Method of Strawberry topping

In a bowl mix 5 – 6 chopped strawberries and lemon juice and sugar.  Keep this mixture for half an hour.


Pour the cheese filling over the biscuit base. Then chill in the fridge for a couple of hours, or overnight

Top with chocolate shavings  and strawberry topping.
