Last few days were full of activities. His result, new books, new almirah and above all starting his daily routine of going to school. A good start after an almost month long break from getting up early morning and going straight into the kitchen for lunch and all. Whenever his school starts, I miss my leisurely long time of sitting quietly on my sofa alone with my cup of tea.
For the last few days there was no internet connection because there was some work going on, on the roads. Damaged cables were being replaced by new ones. Don’t know how long this will take till then, I somehow managing with my mobile Aircel connection, which is damn slow.
I made this bread just before a day, his school starts. It came out so yummy that it became our breakfast as well as lunch and we didn’t take anything else except a cup of tea. This wonderful recipe is surely a keeper and definitely I will make again. Rise perfectly and most importantly made from whole wheat make it more favorable in our home. With this bread all goes well right from the beginning till end.
The process of baking this bread second time was totally new to me by slicing them and filling the inside out with a mixture of garlic, butter and basil.

For the garlic bread:
- 1 head of garlic
- 2 cups whole wheat flour
- 1 cup all purpose flour
- ½ tbsp dry active yeast
- 1 tbsp sugar
- 2 tbsp oil or unsalted butter at room temperature
- 1 cup water plus 2 or 3 tbsp more if required
- 1 tsp salt
For the garlic butter:
- ½ cup butter
- 5-6 garlic, finely chopped
- 2 to 3 tsp finely chopped basil
- salt and black pepper powder as required
For garlic butter
In a bowl beat the butter until softened add in the chopped garlic, basil black pepper and salt.
For the garlic bread
On a gas top roast the garlic. Peel and mash the garlic cloves.
Stir 1 tbsp of sugar in warm water adds in the yeast and keep this mixture in warm place of 10 – 15 minutes.
In another bowl sift both flours and salt. Add oil, mashed garlic and the yeast mixture. Knead the dough and add 1 or 2 tbsp water if the dough looks dry. Keep this dough in a greased bowl, covering it with a kitchen towel. Leave this dough to rise for 3 hours or until double in size.
Now on a work surface, dust some flour if required. Knock back the air and roll into a log. Seam the edges. Place the dough loaf in a greased loaf pan of 9 x 4 inches. Cover and keep aside for 45 minutes to 1 hour. Brush the bread with some milk.
Bake the bread in a preheated oven for 45-55 minutes for 180 degrees C. Let it cool.
Preheat the oven to 200 degrees C. Slice the whole bread keeping the base intact(as you can see the above picture). Apply the garlic butter on each slice of the bread on both sides as well as on top of the bread. Bake the garlic bread in the preheated oven for 12-15 minutes or till the butter melts.
