Almost half of the holidays were over and no plan has been finalized yet, to go out stations. However, on internet, my husband took us everywhere by asking and showing various pictures. We, too very excitedly shortlists number of places, but our plans always remained plans. It appears like, these vacations will too went wasted, sitting in our home and making and eating ice creams and sometimes just making and not getting the chance to taste them too, when your ice cream is as delicious as this one.
When my son tasted this, he warned me to leave the whole batch for him. However he will never come to know that when he ordered me to bring a scoop, I enjoyed my share. But I know this recipe is so simple that I can make this every day. When I was clicking his picture while he was licking it, he told me that he doesn’t like me posting his pictures on my posts. I respect his choice and stopped there. I hope he would change his mind soon. I remembered even when I was a kid even I don’t like to be photographed.
After getting lots of accolades from him , he asked, whether I can make butterscotch ice cream too, his second favorite. How can I say no? It will be next in my ‘to do’ list.

Recipe adapted from Cooking and me
- Cocoa powder – ½ cup
- Powdered Brown sugar – 1/2 cup(or you can use normal powdered white sugar)
- Milk – ¾ cup
- Low fat cream – 1 ½ cup
- Vanilla essence- 1tsp
- Pinch of salt
Whisk together the cocoa and sugar. Add the milk to this and continue whisking until sugar and cocoa dissolves. Add cream, salt and essence to it and beat it with a hand blender or in a food processor for 2 minutes. Pour this mixture in an air tight container and place it in a freezer. After 2 hours take that mixture out of the freeze and blend it again in the mixer. Repeat these steps for 2 to 3 times. Churning again and again will remove ice crystals from the ice cream. These steps really make your ice cream smooth.
