Whole wheat Brownie…an indulging and kid’s favourite

I haven’t baked anything in the last five days. Every time I step into the kitchen to bake something I come out thinking about the work involved. But yesterday, when my Sister-in-law asked me to bake two brownies for her I spend my whole night thinking about my next day adventure of whipping something new (share recipe soon).

Last week of every  vacation is kept for helping my son in starting and finishing his holiday homework. Luckily he managed to complete that in my time.   Now, waiting for his school to open, so that, I can get back to a schedule. His holidays always make me lazy. He too will concentrate on better thing of life other than electronic gazettes.

In continuation of my two earlier posts today also, I am sharing one more story of this summer vacation. My nephews and my sister visited my house to spend a weekend with us. I always look forward for their visit because unlike all here, they love and enjoy my bakes. I made brownie for them though they love all kinds of cakes made by me but chocolate brownie is always an ultimate pleasure.   I was not wrong in my selection of brownie, as next day when I asked that which cake they would prefer. They all unanimously answered, “The same brownie”. Though I hate to make the same thing again but agreed on the demand of children and to your amazement I made the same brownie on the third day too.

Recipe adapted from the show Firangi Tadka (by Shef Chinu)

Ingredients

  • Walnuts – ½ cup +2 tbsp for sprinkling
  • Butter – 250 gm
  • Cocoa powder – 80 gm
  • Dark Chocolate – 200 gms
  • Sugar – 350 Gms
  • Eggs – 4 or 1 can condensed milk
  • Baking powder – 1 tsp
  • Whole wheat flour – 65 Gms
  • Vanilla Essence- 1 tsp

Method

Preheat the oven at 200 degree C. Line a 9” baking tray with baking paper. Sift flour, cocoa powder and baking powder in a bowl, mix chopped walnuts into it. Melt butter and chocolate over brain Marie without burning chocolate add sugar (do not over mix).  Now add egg one by one then add vanilla essence. Finally fold the dry ingredients into the wet ingredients. Pour this mixture into the prepared tin, sprinkle some walnuts over the top. Bake for about 30 minutes. Remember donot overbake any brownie. When tested by knife some soft crumbs must come out. When cool down cut into squares.
