Ice Cream Cake…..not so memorable birthday

At 11 years of age,  you can’t expect your birthday to be celebrated this way with no balloons, no party, no elaborate menu. But when mom and son both were down with 103.5 degree temperature, what would you expect?  Yet at the end of the day his father got him a gift of his choice, so he has no regrets.

I made  not so best looking (or better called worst looking) ice cream cake with a little or almost no decoration at all. I planned a chocolate collar around the cake but with so much temperature running,  I just could not muster up the courage to work with chocolate.  Though my son very lovingly said that it is the tastiest  and best looking cake he ever had. But I know it was not.

Ice cream was certainly not the right choice with such high fever but he wanted that cake only.   I have taken  just a few pictures of the cake because as you can see it was not frozen well and every time I take it out from the freeze to click, it started melting.

Finally wnen he cut the cake he was so happy to have slice of his favourite cake.  He loved it.

I could not do anything on his birthday, just  made these chocolate crackle ladoos, my son’s favorite.

Actually this was the first cake which I actually made on his birthday otherwise on his birthday he always ordered cake from the bakery.   Though I made a cake (picture below)  last year too, but  not for his gang but for others.   But this time he gave me the privilege.  Thankfully with such a ugly looking cake  his friends were not invited otherwise I am sure they would say the same thing.

A small party of his birthday is surely coming next week till then you enjoy this very simple  cake which requires no work and if the sponge is ready, it is ready in minutes of course excluding the freezing time.   Even if you are in a hurry you can buy a readymade sponge and give it a try.

Sponge recipe adapted from Natasha Kitchen

Ingredients

  • Whole wheat flour – ½ cup + 1/8 cup)
  • Baking powder – ½ tsp + 1/8 tsp
  • Baking soda – ¼ tsp
  • Salt – ¼ tsp
  • Eggs – 2
  • Granulated sugar – ¼ cup +1/8 cup
  • Oil – ¼ cup
  • Buttermilk – ¼ cup or (mix ¼ cup milk with ¼ tsp white vinegar and let it stand for 5 minutes)
  • Vanilla essence – ½ tsp

Method

Preheat the oven at 180 degree C. Line a 6 inches loose bottom cake tin or any tin with baking paper.

In a bowl sieve flour, baking powder, baking soda and salt. Take another bowl and beat eggs and sugar for 2 to 3 minutes or until light and fluffy. Add all the ingredients into this and beat for one more minute. Pour this into lined baking tin and bake for 20 minutes. Take it out and cool it on a wire rack.

for filling

  • Vanilla Ice cream – 700 ml
  • Any tinned mixed fruit for filling and garnishing

Assembling

Let the ice cream comes to a temperature of a whipped cream consistency by putting it outside for some time.

Slice the cake into two. Take any loose bottom tin and make a layer of sliced cake on the bottom (cut side up) sprinkle some sugar syrup from the tinned fruit  and make a thick layer of ice cream. Make another layer by spreading tinned mixed fruit. Again another layer of cake then sprinkling of sugar syrup then again ice cream. Level it smoothly.

You can make as many layer according to your tin size. After layering put this in the freezer to chill for 4 to 5 hours. Once it is set, take it out and run a blunt knife all around the edges so that it comes out easily. Garnish as you desire.
