Again one more story of my childhood to share.  Every year, during this day we got a beautiful dress of our choice and  to  flaunt my new frock to my friends, I kept on looking for opportunities to go to the market or to my friends.    Later  in the evening  we all go together  to buy  some decorative items for the house and  then we perform  puja, which I found a little lengthy but  my father always  makes that interesting, by giving us various task to keep us occupied.  Later an elaborate and delicious meal and in the end the dreadful part crackers. I hate the sound of crackers.

Now, when I too have became a mother and a caretaker  of the house, the whole responsibility falls on me and I don’t think of taking some extra work on this day.    But, when we got a call from a family friend, who were visiting us to wish us happy diwali and to have my cake. I am delighted and chose to make a chocolate pound cake with minimal decoration.

Chocolate Pound Cake

Ingredients

  • Whole wheat flour –2cups or 250 gms
  • Buttermilk – 1 cup (prepared by mixing  1 cup yogurt  and ½ cup water)
  • Egg – 1
  • Baking Powder – 1 tsp
  • Baking Soda – ½ tsp
  • Orange juice – 3 tsp
  • Dark Chocolate – 75 gms
  • Butter – 100 gms
  • Sugar – 200 gms
  • Cocoa Powder – 30 gms

I  used ½ cup of  whipped cream with  a drop of  pink food color.

Method

  1. Preheat the oven to 180 degree C.
  2. Melt the chocolate in a small bowl, over a water bath.  Add the orange juice to the chocolate.
  3. Sift together the flour, cocoa, baking powder and baking soda and set aside.
  4. In a bowl, cream together the butter and sugar. Add in the egg and whisk until well incorporated.
  5. Now add the flour mixture and buttermilk alternately starting and ending with the flour.
  6. Spoon or pipe the batter into lined 9” tin.
  7. Bake for 30 – 35 minute or till a skewer comes out clean.
